Herbed Champagne Dijon Vinaigrette

- 1 clove garlic, finely minced
- 1 shallot, minced
- 2 tablespoons champagne vinegar
- 1 tablespoon fresh lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon honey (Vegans: use agave nectar)
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon fresh tarragon, chopped
- 1 teaspoon fresh thyme, chopped
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon kosher salt
- ¼ cup extra virgin olive oil
- Whisk all ingredients, except for the olive oil, in a small bowl until combined. Gradually whisk in the olive oil until emulsified.
