- 3/4 cup granulated sugar
- 1 teaspoon quality pure vanilla extract
- 1 teaspoon pineapple extract (optional)
- 3 large eggs
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 20 ounce canned diced pineapple , drained and chopped a little smaller
- For the Chocolate Glaze:
- 7 ounces dark chocolate , chopped
- 2 teaspoons coconut oil
