Preheat the oven to 425 F. If using convection/fans(that's what I use for these) preheat it to 400 F.
Place the sweet potato strips into a large bowl. Drizzle over the olive oil and toss to even coat. Combine the seasonings in a small bowl, pour it over the fries, and toss until they're evenly coat.
Line a baking sheet with parchment paper. Spread the sweet potatoes out evenly and in a single layer. You will likely need a second baking sheet for this in which case be sure to place the second sheet two rungs below the first one to allow for adequate air flow.Bake the sweet potato fries for 20 minutes, then use a metal spatula to carefully turn the fries over, again making sure they are spread out in a single layer. Move any browned fries along the edges towards the middle of the tray. If using two trays of fries, swap oven rack positions. Continue to bake another 20 minutes or until the fries are lightly browned and crispy (time will vary depending on the thickness of the fries).Serve immediately.
