Ingredients

  • 2 tablespoons sweet paprika
  • 2 teaspoons brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon freshly ground black pepper
  • 3/4 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried parsley
  • 2 bay leaves

Instructions

  • Put all the ingredients in a jar (except for the bay leaves), shake to thoroughly combine, and then seal with a lid. Keep the spice blend stored in an airtight container, preferably in a dark, cool place. Will keep for several months.
Makes just over 1/4 cup or about 5 tablespoons.
  • To use this dry rub on your pot roast you'll need about 2 tablespoons for every pound of meat.  Feel free to use more.
Blot your roast dry and then rub it down on all sides with this pot roast seasoning mix. From there you'll brown the meat in a Dutch oven or other heavy pot and proceed with whichever pot roast recipe you're using (adding the onions and veggies and whatever else you're including) and adding the bay leaves along with the liquid.
