Cajun Chicken

Ingredients
 
 

  • 4 large boneless, skinless chicken breasts (about 2-2 1/2 pounds)
  • 2 tablespoons neutral tasting oil (e.g., avocado, canola, peanut)
  • 2 tablespoons butter
  • juice of one lime
  • Cajun Seasoning:
  • 2 teaspoons smoked paprika
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 3/4 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon white pepper
  • 2 teaspoons kosher salt

Instructions
 

  • Remove the chicken from the fridge and let it sit at room temperature for about 30 minutes. Pound the chicken breasts to an even thickness of about 3/4 inch. Blot the chicken dry with a paper towel.
    Combine the ingredients for the Cajun seasoning in a small bowl or jar.
    Generously coat all sides of the chicken breasts with the Cajun seasoning, pressing the seasonings into the meat.
  • Heat a large cast-iron skillet over medium-high heat, waiting until it is good and hot, then add the oil and butter. Place the chicken breasts in the skillet and cook for 3-4 minutes. Turn the breasts over and cook on the other side for another 3-4 minutes or until the chicken is thoroughly cooked through and the thickest part registers 165℉. If needed, add a little more butter to the skillet. Using an instant read thermometer will ensure the chicken is cooked but not overcooked, enabling the chicken to be moist and tender. *See Note below for oven method.
    Transfer the chicken to a plate, loosely tent with foil, and let rest for 5 minutes before slicing or serving whole. If desired, squeeze some fresh lime juice over the chicken breasts just before serving.

Notes

Oven Method: Preheat the oven to 450 F. Place the chicken breasts or cutlets in a baking dish and drizzle with some olive oil. Bake for 16-20 minutes or until the chicken is cooked through. Length of time will depend on the thickness of the breast. Use an instant read thermometer to check the thickest part of breast; it should register 165 F. You can turn the broiler on for 3-5 minutes if you'd like the chicken a little browned. Transfer the chicken to a plate, loosely tent with aluminum foil, and let rest for 5-10 minutes before serving.
