Catalina Dressing

This homemade Catalina Dressing tastes so much better and fresher than store-bought, uses just handful of staple ingredients, and whips up in 5 minutes!

Ingredients
 
 

  • 1/2 cup red wine vinegar
  • 1/2 cup neutral flavored oil , e.g. avocado, sunflower, canola
  • 1/3 cup ketchup (click link for my homemade ketchup!)
  • 1/3 cup granulated sugar
  • or sugar alternative (for low sugar option)
  • 1/4 cup chopped yellow onion
  • 1 tablespoon concentrated tomato paste
  • 1 teaspoon Worcestershire sauce (vegans: use tamari or soy sauce)
  • 1 teaspoon paprika
  • 3/4 teaspoon kosher or sea salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder

Instructions
 

  • To make this dressing simply place all of the ingredients in a blender. Turn the blender on to high speed for about 30 seconds or until the mixture is perfectly smooth and emulsified. Taste the dressing and adjust the salt, vinegar or sugar according to preference.
    Transfer the dressing to an airtight jar and store it in the fridge.
    For the best flavor let the dressing chill for at least a couple of hours before using.
    This dressing will keep for 7-10 days in the fridge. Makes about 2 cups.
