1/3cupdry white wine(e.g., Sauvignon blanc, vermouth)
1tablespoonfresh parsley, chopped
1teaspoonfresh thyme leaves
6ozspreadable goat cheese, see note
Instructions
To make the crostini:Preheat the oven to 350 degrees F. Lay the baguette slices on a baking sheet and drizzle lightly with olive oil. Bake for 13-15 minutes or until crispy and very lightly golden brown. Set aside until ready to use.
To make the chanterelle topping:Heat the olive oil in a medium skillet over medium-high heat. Add the shallots and garlic and saute until tender, 3-4 minutes. Add the mushrooms, salt and pepper, and saute until tender and the juices have evaporated, about 6-8 minutes. Add the wine and quickly bring to a full boil for 1 minute. Reduce the heat, add the herbs, and simmer for 2 minutes.
To assemble the crostini:Spread some goat cheese on each crostini and top with some of the mushroom mixture. Top with sprigs of fresh thyme, if desired.
Notes
If you don't like goat cheese, use a delicate spreadable cheese of your choice or some cream cheese.
