Roasted Rutabaga

Ingredients
  

  • 2 pounds rutabagas (aka swedes) , peeled and diced into 3/4 inch cubes
  • 1/4 cup extra virgin olive oil
  • For the dressing:
  • 2 tablespoons Dijon mustard
  • 1 1/2 tablespoons chopped fresh rosemary
  • 2 teaspoons honey or maple syrup
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika

Instructions
 

  • Preheat the oven to 400 F.
    Prepare the dressing: Place all of the ingredients in a bowl and stir to combine.  
    Pour the dressing over the diced rutabaga in a large mixing bowl and stir until evenly coated.  Pour the rutabagas out in a single layer onto a lined baking sheet.
    Bake for 20 minutes.  Use a spatula to turn them over and then bake for another 25-30 minutes or until soft inside and starting to brown on the edges.
    Serve immediately.
