- 2 pounds rutabagas (aka swedes) , peeled and diced into 3/4 inch cubes
- 1/4 cup extra virgin olive oil
- For the dressing:
- 2 tablespoons Dijon mustard
- 1 1/2 tablespoons chopped fresh rosemary
- 2 teaspoons honey or maple syrup
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
Preheat the oven to 400 F.Prepare the dressing: Place all of the ingredients in a bowl and stir to combine. Pour the dressing over the diced rutabaga in a large mixing bowl and stir until evenly coated. Pour the rutabagas out in a single layer onto a lined baking sheet.Bake for 20 minutes. Use a spatula to turn them over and then bake for another 25-30 minutes or until soft inside and starting to brown on the edges.Serve immediately.
