Instructions

  • Preheat the oven to 350 F/ 180 C. Butter a 9 or 10 inch springform.
In a small bowl, combine the flour, sugar, baking powder, mixed spice, and salt.
In a separate, larger mixing bowl, whisk together the milk, eggs and vanilla extract.
Add the diced cold butter to the flour mixture and rub it with your hands to create fine crumbs. Work quickly so that the butter remains cold. An easier and quicker alternative is to pulse the mixture in a food processor.
Add the apples and stir to thoroughly coat them (this will prevent the apple chunks from sinking to the bottom of the cake). Add the wet mixture to the dry apple mixture. Stir just until combined. Be careful not to over-stir. The batter will be very thick.
Spoon the batter into the greased springform and smooth the top. Sprinkle 2 tablespoons of sugar over the top.
  • Bake the cake for 65-75 minutes or until it's golden brown and a toothpick inserted into the center comes out clean (test it a couple of times to make sure the toothpick is going into the cake and not into the apple).
Let the cake cool in the pan for 5-10 minutes, then remove the outer ring and transfer the cake to a wire rack to cool completely before slicing.
