Blue Cheese Whole Grain Crackers

With the nutty, caramelized flavor of whole grains and zesty blue cheese, these crispy homemade crackers are simply delicious!

Here is something really tasty you can serve at your next get-together.  These crackers are incredibly easy to make and taste absolutely fantastic!

Crackers in one form or the other have been around for centuries and have been made from a variety of flours in a variety of shapes and with a variety of seasonings (or none at all).  Some ancestors to the modern cracker include flatbread, lavash, matzo, Swedish crisp bread and papadums.  And a more modern ancestor is military hardtack (thank goodness the rising generation of crackers have come a long way from those!)

These crackers are made with whole grains for a healthier snack and which also contribute a rich and nutty flavor.  The whole grains and butter caramelize beautifully in the oven, leaving a delightfully crispy edge as you bite into the center and taste the luscious flavor of blue cheese!

Let’s get started!

Place the butter and blue cheese in a mixing bowl and beat with an electric beater until combined (some small lumps of blue cheese will remain).  Add the flour and beat until combined.

Gather the dough with your hands and roll it into a log that is about 1 1/2 inch in diameter.  Wrap the log in plastic wrap and refrigerate overnight .  Alternatively you can freeze it for 2 hours.

Preheat the oven to 400 degrees F.  Slice the log into slices about 1/4 inch thick.  Work quickly before the dough gets soft.

Place the crackers on a lined cookie sheet sprinkled with sesame and/or poppy seeds.  Bake for about 8 minutes or until the edges of the crackers are golden brown.  Let the crackers cool completely before serving.  Best eaten the same day but can store them in an airtight container for a few days.

Makes about 60 crackers.

      Hi Bonnie! Girl, you really just need to get over your aversion and learn to love blue cheese for the perfectly lovable stuff it is, LOL! :) In the meantime though, while you’re working on that love affair, you can try something like cheddar or Swiss. I haven’t experimented with the ratios using other cheeses though and so I’m unsure about the final texture outcome.

        Ha! Ha! I have tried. I was wondering how feta cheese would taste. Maybe I’ll just have to experiment. Oooh, we’ll do this as a home economics lesson tomorrow for home school.
